For me, I am glad that they have a scientific explanation about umami, but growing up only knowing the basic four tastes of the tongue, it can still be a bit abstract to think about umami. However, the moment I tasted a spoonful of miso-rich ramen broth and felt that deep, mouth-coating savoriness, the concept clickedโ€”umami isnโ€™t theory; itโ€™s the cozy, lingering โ€˜wowโ€™ that makes you reach for one more bite.
