Jamaican Jerk Chicken Wet Marinade

- Wet Ingredients
½ cup soy sauce
¼ cup oil
¼ cup beer
- Dry Ingredients
64 grams escallion
6 cloves garlic
2 whole Scotch bonnet Peppers
16 grams ginger
6 grams pimento seed
1 teaspoon thyme
1 teaspoon ground nutmeg
2 pimento leaves
1½ tablespoon salt
¼ teaspoon black pepper
1 teaspoon sugar
Directions
- Blend everything together for about 20 seconds and you’re done.

Notes
- To convert to a Jamaican wet jerk rub, keep the same jerk marinade recipe ingredients but DRINK THE BEER instead of pouring into the blender 😉 And instead of blending, use a food processor or mortar and pestle so that your jerk seasoning has more chunks, which is how we like it in Jamaica!
