- Tomatoes – from canned tomates
- Onions & garlic
- Chili peppers – but in the form of powder
- Spice mix
- Chicken Stock – made from the chicken bones in the pre-prep stage

Ingredients
Boneless Chicken Breast
Salt (to taste)
Pepper (to taste)
Cajun spice mix
1 jar Ghee (Clarified butter)
3 bay leaves, dried
1 large white onion, diced
2 Sweet peppers, diced
4 garlic cloves, minced
Scotch bonnet peppers, diced
4 tbsp Taco seasoning
Chunky tomato sauce
2 tsp chicken bouillon
½ cup beer
½ cup water
- Other Ingredients
Corn/Flour tortillas
Shredded Cheddar or Mozzarella Cheese
Cilantro
Sour Cream
Lime (garnish)
Directions
- Season chicken breast with salt, pepper, and Cajun seasoning and marinate for at least an hour in the fridge.
- Heat skillet then add ghee to the pan
- Sear chicken breast skin side down first for three minutes on each side, until fully cooked then set aside on a plate to cool.
- Add more ghee to the pan then add, the diced onions, peppers, and bay leaves and stir for about 30 seconds.
- De-glaze pan with the beer, water, and tomato sauce, give it a quick stir then season with the bouillon, taco spice, garlic, scotch bonnet peppers, summer until slightly thickened. Taste and adjust seasoning if needed. Once the sauce is done remove from heat and set aside in a burner not in use.
- Shred the cooked chicken breasts, using two forks or a large standing mixer/ food processor and transfer to a bowl.
- Heat a frying pan then gently glide a tortilla over the sauce to coat in gravy, then quickly transfer it sauce side down to the hot frying pan. Then quickly sprinkle about 2 tablespoons of cheddar and 2 tablespoons of the shredded chicken. Using a spatula, fold the tortilla in half, press down to further flatten the taco. Once the tortilla is golden brown and the cheese melted quickly transfer to a serving plate.
- Repeat the steps until all the tacos are made.
